The old mode conversion was not only complex, it also refused to change the length of a mode, which made it fragile. By moving the mode conversion around a bit, we can not only simplify it, it also ends up being more powerful. git-fsck-cache complains about some of the odder ones, and is quiet about the old (S_IFREG | 664) case, but that's wrong too. Converting the kernel tree is too painful right now, but at least we know how to do it if we ever want to.

This allows the programs to use various simplified versions of the SHA1 names, eg just say "HEAD" for the SHA1 pointed to by the .git/HEAD file etc. For example, this commit has been done with git-commit-tree $(git-write-tree) -p HEAD instead of the traditional "$(cat .git/HEAD)" syntax.
